My name is Michelle, and my husband, Brian, and I have just embarked on a one-year journey with the purpose of consuming as few carbs as possible. We have both lost weight and experienced amazing health improvements (more on that later) in the past several years on a low-carb high-fat diet, but have hit a plateau in both departments. We have started this blog to chronicle our minimal-carb endeavors.
